When adding dry ingredients to a smoothie, one must be prepared for the affect of the ingredients on the physical makeup of the smoothie.  A smoothie will typically have a certain viscosity characteristic.  It may be loose and very liquid (low viscosity) or it could be thick and difficult to pour (high viscosity), or somewhere in-between.  This is important to notice before adding additional dry material like spices or other ingredients.

What to expect when adding dry material to the smoothie.  In a nutshell… the smoothie will thicken.  This is because the moisture in the smoothie will adhere to the dry material through a process called cohesion.  Each particle of dry material will become encompassed (emulsified) with the moisture in the smoothie.

The resultant effect is that all the dry material, that is now encompassed by the smoothie liquid, will be attracted to other encompassed dry material because the smoothie liquid is adhering to itself.  The liquid will act like a molecular glue causing the dry material to thicken the smoothie.
